Ingredients
1.5 lbs boneless skinless chicken thighs or breasts
2 cups low-sodium chicken broth
1 can (10.5 oz) condensed cream of chicken soup
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1.5 cups long-grain white rice (uncooked)
1.5 cups shredded cheddar cheese
1 cup frozen peas (optional)
Instructions
Step 1: Place the chicken thighs at the bottom of the slow cooker insert.
Step 2: In a medium bowl, whisk together the chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper until smooth.
Step 3: Pour the liquid mixture over the chicken, cover, and cook on LOW for 4 to 5 hours (or HIGH for 2.5 to 3 hours) until the chicken is tender.
Step 4: Remove the lid and shred the chicken using two forks directly in the slow cooker.
Step 5: Stir in the uncooked long-grain white rice and frozen peas if using. Ensure the rice is submerged in the liquid.
Step 6: Cover and cook on HIGH for an additional 45 to 60 minutes, or until the rice is tender and has absorbed most of the liquid.
Step 7: Stir in the shredded cheddar cheese until melted and creamy. Serve warm.
Notes
If the rice seems too dry after the final cooking stage, stir in a splash of milk or extra broth to reach your desired creaminess.
