Description

This comforting Fajita Chicken Casserole brings the vibrant flavors of classic fajitas into an easy, cheesy baked dish, perfect for a fuss-free weeknight meal.


Ingredients

3 cups cooked chicken, shredded or diced
2 cups cooked rice
1 large red bell pepper, thinly sliced
1 large green bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
1 (10 ounce) can diced tomatoes with green chilies (Rotel), undrained
1 cup chicken broth
2 tablespoons fajita seasoning mix
2 cups shredded Mexican cheese blend
Fresh cilantro, chopped (for garnish, optional)
Lime wedges (for serving, optional)


Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large skillet over medium-high heat, sauté the sliced bell peppers and onion until tender-crisp, about 5-7 minutes. You want them to still have a slight bite.
Step 3: In a large mixing bowl, combine the cooked chicken, cooked rice, sautéed bell peppers and onion, undrained diced tomatoes with green chilies, chicken broth, and fajita seasoning. Stir well to ensure all ingredients are evenly distributed and coated with seasoning.
Step 4: Pour the chicken and rice mixture into the prepared baking dish, spreading it into an even layer.
Step 5: Generously sprinkle the shredded Mexican cheese blend over the top of the casserole.
Step 6: Bake for 25-30 minutes, or until the casserole is heated through, the cheese is completely melted and bubbly, and slightly golden brown on top.
Step 7: Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh cilantro and serve with lime wedges, if desired.

Notes

Feel free to use leftover chicken or rotisserie chicken to speed up prep. For extra heat, add a diced jalapeño to the vegetables. Black beans or corn can also be stirred in with the other ingredients for added fiber and flavor.
