1/4 cup light brown sugar, packed
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground ginger

1/2 teaspoon salt
2 large eggs
1/2 cup molasses
1 3/4 cups milk (whole or 2%)
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract


Instructions

Step 1: Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with cooking spray or a brush of melted butter.
Step 2: In a large bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, ground ginger, ground cinnamon, ground cloves, ground nutmeg, and salt. Ensure there are no lumps of brown sugar.
Step 3: In a separate medium bowl, lightly beat the eggs. Then, add the molasses, milk, melted butter, and vanilla extract. Whisk until well combined.
Step 4: Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. A few small lumps are fine; do not overmix, as this can lead to tough waffles.
Step 5: Ladle about 1/2 to 3/4 cup of batter (or the amount recommended by your waffle iron) onto the hot waffle iron. Close the lid and cook for 3-5 minutes, or until the waffles are golden brown and crisp.
Step 6: Carefully remove the cooked waffle from the iron and transfer it to a wire rack set over a baking sheet in a warm oven (200°F/95°C) to keep warm while you cook the remaining batter. Serve warm with your favorite toppings.

Notes

For an extra indulgent treat, add a handful of mini chocolate chips to the batter before cooking. These waffles are also fantastic with a dollop of lemon-infused whipped cream to balance the rich spices.
