- Baking soda
- Ground ginger
- Cinnamon
- Cloves
- Nutmeg
- Eggs
- Molasses
- Milk
- Butter, melted
- Vanilla extract
Instructions
- Preheat your waffle iron and lightly grease it to prevent sticking.
- In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, and all the warm spices.
- In another bowl, beat eggs, then add molasses, milk, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
- Pour batter onto the hot waffle iron and cook until golden and crisp, about 3–5 minutes depending on your machine.
- Serve warm with maple syrup, whipped cream, powdered sugar, or a sprinkle of cinnamon.
Notes
Don’t overmix the batter to keep waffles tender. Keep waffles warm in a low oven until serving. Add chocolate chips or nuts for extra flavor. Use buttermilk instead of milk for tangier waffles. Prepare batter the night before for easy mornings.
