1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 tablespoon granulated sugar
1/2 teaspoon salt
1 1/4 cups milk
1 large egg
3 tablespoons melted butter
1 teaspoon vanilla extract

Step 2: In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
Step 3: Pour the wet ingredients into the dry ingredients and stir with a whisk until just combined; do not overmix.
Step 4: Let the batter rest for 5-10 minutes while you heat your griddle.
Step 5: Heat a non-stick griddle or skillet over medium heat and lightly coat with butter or oil.
Step 6: Scoop 1/4 cup of batter onto the griddle for each pancake.
Step 7: Cook until bubbles form on the surface and the edges look set, then flip and cook for another 1-2 minutes until golden brown.
Step 8: Serve warm with your choice of syrup, fruit, or butter.
Notes
For the fluffiest results, ensure your baking powder is fresh and the batter has a few minutes to rest before cooking.
