Description

A comforting, savory casserole featuring tender chicken, fluffy rice, rich French onion flavor, and a crispy fried onion topping, perfect for weeknight dinners.

Ingredients

Scale

2 cups cooked chicken, shredded
1 1/2 cups uncooked long-grain white rice
1 (10.5 ounce) can cream of mushroom soup
1 (10.5 ounce) can condensed French onion soup
1 cup beef broth
1/2 cup sour cream
1 1/2 cups shredded Swiss cheese
1 (6 ounce) can French fried onions

Instructions

Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large mixing bowl, combine the shredded cooked chicken, uncooked long-grain white rice, cream of mushroom soup, condensed French onion soup, beef broth, and sour cream. Stir until all ingredients are thoroughly combined.
Step 3: Pour the mixture evenly into the prepared baking dish. Top generously with the shredded Swiss cheese. Cover the dish tightly with aluminum foil and bake for 30 minutes.
Step 4: Remove the foil from the casserole. Sprinkle the French fried onions evenly over the top. Return the casserole to the oven, uncovered, and bake for an additional 5-10 minutes, or until the onions are golden brown and crispy, and the casserole is bubbly.
Step 5: Remove the casserole from the oven and let it rest for 5-10 minutes before serving.

Notes

For an even richer flavor, consider using homemade beef broth. A sprinkle of fresh parsley before serving adds a lovely pop of color and freshness. Leftovers store well in the refrigerator for up to 3-4 days.
