Description
A refreshing and colorful dessert featuring a chewy sugar cookie crust, creamy vanilla frosting, and vibrant fresh berries with a professional glaze.
Ingredients
1 (16.5-ounce) package refrigerated sugar cookie dough
1 (8-ounce) package cream cheese, at room temperature
2 tablespoons butter, at room temperature
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
2 cups fresh strawberries, raspberries, and cherries, washed & dried
1/4 cup apricot preserves
1 tablespoon water
Optional: melted chocolate drizzle and fresh mint leaves for garnish
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a 12-inch pizza pan with parchment paper.
Step 2: Press the sugar cookie dough evenly into the prepared pan and bake for 12-15 minutes until lightly golden.
Step 3: Remove from oven and let the crust cool completely on a wire rack.
Step 4: In a bowl, beat cream cheese, butter, sugar, and vanilla until smooth and creamy.
Step 5: Spread the cream cheese mixture over the cooled crust.
Step 6: Arrange the fruit in your desired pattern over the frosting.
Step 7: Heat apricot preserves and water in the microwave for 15 seconds, strain, and brush over the fruit for shine.
Step 8: Garnish with mint or chocolate if desired and refrigerate until serving.
Notes
Ensure the cream cheese is fully at room temperature to avoid lumps in your frosting. For a thinner crust, you can use only 3/4 of the dough package.
