A quick and vibrant weeknight meal featuring tender chicken, colorful bell peppers, and aromatic garlic, all tossed in a savory sauce and served over fluffy rice.
Ingredients
1 tablespoon sesame oil (or vegetable oil)
2 boneless, skinless chicken breasts, diced into 1-inch pieces
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
2 garlic cloves, minced
1 inch fresh ginger, grated (optional)
1/2 cup chicken broth
1/4 cup soy sauce
1 tablespoon honey or brown sugar
1 teaspoon cornstarch
2 tablespoons water (for cornstarch slurry)
Cooked white or brown rice, for serving
Optional garnishes: sesame seeds, chopped green onions
Instructions
Step 1: In a small bowl, whisk together the chicken broth, soy sauce, and honey/brown sugar. In another small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Set both aside.
Step 2: Heat the sesame oil in a large wok or skillet over medium-high heat. Add the diced chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken from the pan and set aside.
Step 3: Add the sliced green and red bell peppers to the same pan. Stir-fry for 3-5 minutes until they are tender-crisp. Add the minced garlic and grated ginger (if using) and stir-fry for another minute until fragrant.
Step 4: Return the cooked chicken to the pan with the vegetables. Pour the prepared sauce mixture over the chicken and vegetables. Bring to a simmer.
Step 5: Give the cornstarch slurry a quick re-whisk and then slowly pour it into the simmering sauce, stirring constantly. Continue to stir until the sauce thickens to your desired consistency. This usually takes about 1-2 minutes.
Step 6: Remove from heat. Serve the Easy Garlic Chicken Stir-Fry immediately over hot steamed rice. Garnish with sesame seeds and chopped green onions, if desired.
Notes
For extra spice, add a pinch of red pepper flakes with the garlic. If you prefer a stronger ginger flavor, add another 1/2 inch of grated fresh ginger. Ensure your pan is very hot before adding ingredients to achieve that classic stir-fry sizzle and prevent steaming.
