Ingredients
3 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1/4 cup molasses
1 teaspoon vanilla extract
Additional granulated sugar for rolling
Instructions
Step 1: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Step 2: In a medium bowl, whisk together flour, ground ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
Step 3: In a large mixing bowl, cream the softened butter and 1 cup sugar together until light and fluffy.
Step 4: Beat in the egg, molasses, and vanilla extract until combined.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 6: Scoop tablespoon-sized portions of dough, roll into balls, and roll each ball in the additional granulated sugar.
Step 7: Place the sugar-coated dough balls on the baking sheet about 2 inches apart.
Step 8: Bake for 10-12 minutes, or until the cookies have spread and the edges are set.
Step 9: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, chill the dough for 30 minutes before baking to prevent excessive spreading. Using a cookie scoop helps ensure uniform size and even baking for all your cookies.
