1/4 teaspoon black pepper

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easier cleanup.
Step 2: Pat the chicken drumsticks thoroughly dry with paper towels. Removing excess moisture is crucial for crispy skin.
Step 3: In a small bowl, combine the dried oregano, dried thyme, dried rosemary, paprika, garlic powder, onion powder, salt, and black pepper. Mix well to create your herb blend.
Step 4: Place the dried drumsticks in a large bowl. Drizzle with olive oil and toss them gently to ensure each piece is evenly coated.
Step 5: Sprinkle the prepared herb and spice mixture generously over the drumsticks, making sure every surface is well-covered. You can gently rub the seasoning into the chicken.
Step 6: Arrange the seasoned drumsticks in a single layer on the prepared baking sheet. Ensure there is enough space between each drumstick to allow for even cooking and crisping.
Step 7: Bake for 35-45 minutes, or until the internal temperature of the thickest part of the drumstick (avoiding the bone) reaches 165°F (74°C) using a meat thermometer, and the skin is golden brown and crispy.
Step 8: Remove the drumsticks from the oven and let them rest for 5 minutes before serving. Garnish with fresh chopped parsley if desired.

Notes

For an extra kick, add a pinch of cayenne pepper to the herb mixture. You can also experiment with fresh herbs; double the quantity if using fresh instead of dried.
