Description

A classic Brazilian-style brownie featuring a fudgy center, a crackly top, and an intense chocolate flavor using simple pantry ingredients.

Ingredients

Scale

4 large eggs
2 cups granulated sugar
1/2 cup margarine, melted
1/2 cup 50% cocoa powder
1 cup all-purpose flour

Instructions

Step 1: Preheat your oven to 350°F (180°C) and grease or line a 9x9 inch square baking pan with parchment paper.
Step 2: In a large bowl, whisk the eggs and sugar together for 3-5 minutes until the mixture is pale, thick, and voluminous.
Step 3: Pour in the melted margarine (ensure it is not hot) and whisk gently until combined.
Step 4: Sift the cocoa powder and flour into the wet ingredients, then fold them in with a spatula until just combined.
Step 5: Pour the batter into the prepared pan and bake for 25-30 minutes until the edges are set and the top is crackly.
Step 6: Let the brownies cool completely in the pan before slicing into 16 squares.

Notes

For a more intense flavor, use Dutch-processed cocoa powder and add a pinch of salt to the batter.
