A simple and delightful recipe for a homemade funfetti cake, bursting with colorful sprinkles and joyful flavor.
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
1/2 cup milk
2 large eggs
1 tablespoon baking powder
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup rainbow sprinkles
Instructions
Step 1: Preheat oven to 350°F (175°C). Grease and flour a 9x9 inch baking pan.
Step 2: In a large mixing bowl, whisk together flour, baking powder, and salt.
Step 3: In another bowl, cream the softened butter and sugar until light and fluffy.
Step 4: Beat in the eggs one at a time, then stir in the vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients alternately with milk, beginning and ending with dry ingredients. Mix until just combined.
Step 6: Fold in the rainbow sprinkles gently to avoid color bleeding.
Step 7: Pour the batter into the prepared baking pan and smooth the top.
Step 8: Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Step 9: Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
Notes
For an extra pop of flavor, add 1/2 teaspoon almond extract along with the vanilla. Don't overmix the batter to keep the cake tender.
