Description

A foolproof, five-ingredient strawberry jam that sets perfectly and captures the vibrant taste of summer berries.


Ingredients

Scale

2 pints fresh strawberries , washed and stems removed
½ teaspoon lemon juice
4 cups granulated sugar
1.75 ounces powdered fruit pectin (regular, not instant)
¾ cup water


Instructions

Step 1: Crush the strawberries thoroughly using a potato masher until you have 3 to 3.5 cups of mashed fruit.
Step 2: In a small saucepan, mix the pectin and water. Bring to a boil and boil hard for 1 minute while stirring.
Step 3: In a large pot, combine the crushed berries, sugar, and lemon juice. Add the hot pectin mixture.
Step 4: Bring the entire mixture to a full rolling boil and boil for exactly 1 minute, stirring constantly.
Step 5: Skim off any surface foam, ladle into jars, and allow to cool and set for 24 hours.

Notes

Always use fresh lids for canning to ensure a proper vacuum seal.
