Ingredients
3 tablespoons unsalted butter
4 cloves garlic, minced
2 tablespoons honey
3 tablespoons BBQ sauce (your favorite brand)
2 lbs boneless, skinless chicken breasts
1 teaspoon paprika
1 teaspoon onion powder
Salt and black pepper, to taste
8-12 small flour or corn tortillas
1 cup shredded lettuce
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup diced tomatoes
1/4 cup diced red onion
Fresh cilantro, chopped, for garnish
Instructions
Step 1: In a large skillet, melt 3 tablespoons of unsalted butter over medium heat.
Step 2: Add 4 cloves of minced garlic and sauté for about 1 minute until fragrant.
Step 3: Stir in 2 tablespoons of honey and 3 tablespoons of BBQ sauce. Mix well until the sauce is smooth.
Step 4: Add 2 lbs of chicken breasts to the skillet, arranging them in a single layer. Cook for 5-6 minutes on each side.
Step 5: Season the chicken with 1 teaspoon of paprika, 1 teaspoon of onion powder, and salt and pepper to taste. Flip the chicken halfway through cooking to ensure even seasoning and browning. Cook until internal temperature reaches 165°F (74°C).
Step 6: Remove the cooked chicken from the skillet and let it rest on a cutting board for 5 minutes. Using two forks, shred the chicken into bite-sized pieces.
Step 7: Warm the tortillas: In a dry skillet over medium heat, warm each tortilla for about 30 seconds per side until soft and pliable. Alternatively, wrap them in a damp paper towel and microwave in 15-second intervals.
Step 8: Assemble the tacos: Place a generous portion of shredded honey BBQ chicken onto each warm tortilla.
Step 9: Top the chicken with shredded lettuce, shredded cheese, and diced tomatoes.
Step 10: Add diced red onion and garnish generously with fresh chopped cilantro. Serve immediately and enjoy!
Notes
For a spicier kick, add a pinch of cayenne pepper to the chicken seasoning or a few pickled jalapeños as a topping. You can also use chicken thighs for an even juicier result, adjusting cook time as needed.
