1 cup pineapple juice (100% juice)
1/2 cup soy sauce (low sodium preferred)
1/2 cup ketchup
1/2 cup brown sugar, packed
1/4 cup chicken broth
2 tablespoons fresh ginger, grated
2 tablespoons garlic, minced
1 teaspoon sesame oil
Instructions
Step 1: In a medium mixing bowl, combine the pineapple juice, soy sauce, ketchup, and chicken broth for the easy huli huli chicken sauce base.
Step 2: Add the packed brown sugar to the mixture and whisk vigorously until the sugar is completely dissolved.
Step 3: Stir in the grated fresh ginger, minced garlic, and sesame oil until the easy huli huli chicken sauce is well blended.
Step 4: If using as a glaze, pour the mixture into a small saucepan and simmer over medium heat for 8-10 minutes until slightly thickened.
Step 5: Allow the easy huli huli chicken sauce to cool completely before using it as a marinade or storing it in the refrigerator.
Notes
For the best flavor, use fresh ginger and garlic. If you use the sauce as a marinade, discard any sauce that has touched raw meat. Always keep a separate portion for glazing during the last few minutes of grilling.
