A moist and zesty lemon cake made with 7UP soda for a light, fluffy texture and incredible citrus flavor.
Ingredients
1 box lemon cake mix
1 (3.4 oz) box instant lemon pudding mix
4 large eggs
1 cup 7UP soda
3/4 cup vegetable oil
Instructions
Step 1: Preheat your oven to 325°F (165°C) and grease/flour a 10-inch Bundt pan.
Step 2: In a large bowl, combine the cake mix, lemon pudding mix, and eggs.
Step 3: Add the vegetable oil and 7UP soda to the bowl.
Step 4: Beat on medium speed for 2 minutes until the batter is smooth.
Step 5: Pour into the Bundt pan and bake for 45-50 minutes.
Step 6: Cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
Notes
Ensure the 7UP is fresh and highly carbonated for the best rise. You can also add a simple powdered sugar glaze for extra sweetness.
