Description
A bright, zesty, and incredibly fast pasta dish featuring fresh garlic, lemon zest, and a buttery sauce. Perfect for busy weeknights!
Ingredients
12 oz spaghetti or linguine
4 tablespoons unsalted butter
2 tablespoons extra virgin olive oil
6 cloves garlic, thinly sliced
1 teaspoon red pepper flakes (optional)
Zest and juice of 2 large lemons
1/2 cup freshly grated Parmesan cheese
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
1 cup reserved pasta water
Instructions
Step 1: Bring a large pot of heavily salted water to a boil and cook the pasta according to package directions until al dente.
Step 2: While the pasta is cooking, heat the butter and olive oil in a large skillet over medium-low heat.
Step 3: Add the sliced garlic and red pepper flakes to the skillet. Sauté for about 2 minutes until the garlic is fragrant and soft, but not browned.
Step 4: Reserve 1 cup of the pasta cooking water, then drain the pasta.
Step 5: Add the pasta, lemon zest, lemon juice, and half of the reserved pasta water to the skillet with the garlic.
Step 6: Toss everything together over low heat, adding more pasta water as needed until the sauce is glossy and coats the noodles.
Step 7: Stir in the Parmesan cheese and fresh parsley. Season with salt and pepper to taste and serve immediately.
Notes
Always use fresh lemon juice for the best flavor. If the sauce is too thick, add more pasta water one tablespoon at a time.
