Description

A magically easy, self-crusting lemon pie that's bursting with bright, zesty flavor and comes together with minimal effort.

Ingredients

Scale

1 can (14 oz) sweetened condensed milk
1/2 cup lemon juice (freshly squeezed for best flavor)
2 large eggs
1/4 cup melted butter
1/2 cup self-rising flour
1 teaspoon vanilla extract
Zest of 1 lemon

Instructions

Step 1: Preheat oven to 350°F (175°C). Grease a 9-inch pie dish or similar baking dish.
Step 2: In a large mixing bowl, combine the sweetened condensed milk, lemon juice, eggs, melted butter, vanilla extract, and lemon zest. Whisk until well blended.
Step 3: Gradually add the self-rising flour to the mixture, folding gently to combine but avoid overmixing.
Step 4: Pour the batter into the prepared pie dish.
Step 5: Bake for 40-45 minutes or until the top is lightly golden and center is set.
Step 6: Remove from the oven and let cool to room temperature before serving. The pie will thicken as it cools.

Notes

For an extra touch, serve with a dollop of whipped cream or fresh berries. Ensure the pie cools completely for the best texture, as it continues to set as it chills.
