Instructions
- Prepare Your Baking Sheets: Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper or silicone baking mats.
- Make the Macaron Batter: Sift together powdered sugar and almond flour. In a separate bowl, whip egg whites until foamy, gradually add granulated sugar, and continue whipping until stiff peaks form. Add vanilla extract and food coloring if desired. Gently fold in the sifted dry ingredients until the batter flows like lava.
- Pipe the Macarons: Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheets. Tap the sheets to release air bubbles and let them sit at room temperature for 30-60 minutes until a skin forms.
- Bake the Macarons: Bake in the preheated oven for 15-18 minutes, rotating the sheets halfway through. Let them cool completely on the baking sheets.
- Make the Filling: Beat softened butter until creamy. Gradually add powdered sugar, vanilla extract, and salt. Mix until smooth and fluffy.
- Assemble the Macarons: Pair similar-sized shells, pipe filling onto one shell, and gently press the other shell on top. Refrigerate assembled macarons for at least 24 hours before serving.
Notes
Experiment with different extracts and food colorings for unique flavors and appearances. Alternative fillings like chocolate ganache or fruit preserves can be used. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to a month. Allow frozen macarons to thaw in the refrigerator before serving.
