Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 1/2 cups shredded cheddar cheese
1/2 cup diced tomatoes (canned or fresh)
1/4 cup diced green chilies (canned, optional)
1/2 teaspoon paprika

Instructions
Step 1: Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
Step 2: Heat olive oil in a skillet and sear chicken for 6-7 minutes per side until fully cooked (165°F). Remove and rest.
Step 3: In a saucepan, melt butter and whisk in flour for 1 minute to create a roux.
Step 4: Slowly whisk in milk until the mixture is thick and smooth.
Step 5: Stir in the shredded cheddar cheese until melted, then add tomatoes, chilies, and paprika.
Step 6: Pour the warm cheese sauce over the seared chicken and serve immediately.
Notes
Use a block of cheese and shred it yourself for the smoothest sauce. Pre-shredded cheese contains anti-clumping agents that can lead to a grainy texture.
