A quick and flavorful chicken dish topped with BBQ sauce, melted Monterey Jack cheese, and crispy bacon.
Ingredients
2 boneless, skinless chicken breasts (about 1 pound total)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup BBQ sauce
1/2 cup shredded Monterey Jack cheese
4 slices cooked crispy bacon
2 tablespoons chopped green onions
Instructions
Step 1: Season the chicken breasts evenly on both sides with garlic powder, onion powder, smoked paprika, salt, and pepper.
Step 2: Heat a large oven-safe skillet over medium-high heat with 1 tablespoon of olive oil. Sear chicken for 5-6 minutes per side until almost cooked through.
Step 3: Brush the top of each breast with BBQ sauce, then top with 2 slices of bacon and a handful of Monterey Jack cheese.
Step 4: Cover the skillet with a lid or place under the broiler for 1-2 minutes until the cheese is melted and bubbly.
Step 5: Remove from heat, garnish with chopped green onions, and rest for 3 minutes before serving.
Notes
Ensure chicken is patted dry before seasoning for the best sear. Use an oven-safe skillet to make the melting process easier.
