A creamy, refreshing no-bake pie that perfectly captures the tropical lime flavor of Taco Bell's iconic Baja Blast soda.
Ingredients
1½ cups graham cracker crumbs
â…“ cup granulated sugar
6 tablespoons unsalted butter, melted
8 ounces cream cheese, softened
1 cup powdered sugar
1 cup Mountain Dew Baja Blast soda (for reduction)
8 ounces whipped topping, thawed
1 teaspoon lime zest
3 drops food coloring (teal/blue-green mix)
Instructions
Step 1: Mix 1½ cups graham cracker crumbs, ⅓ cup sugar, and 6 tbsp melted butter. Press into a 9-inch pie plate and freeze for 15 minutes.
Step 2: Simmer 1 cup of Baja Blast soda in a saucepan for 10-12 minutes until reduced to 1/4 cup. Let it cool completely.
Step 3: Beat the softened cream cheese and powdered sugar until smooth. Mix in the cooled soda reduction and lime zest.
Step 4: Add food coloring until the mixture matches the Baja Blast teal color.
Step 5: Fold in the whipped topping gently until no white streaks remain.
Step 6: Spread the filling into the crust and refrigerate for 4-6 hours or until firm.
Notes
Ensure the soda reduction is completely cold before adding to the cream cheese to avoid a runny pie.
