A creamy, layered icebox cake featuring graham crackers, vanilla pudding, and spiced apple pie filling topped with rich caramel.
Ingredients
1 pack (14.4 oz) graham crackers
2 cups heavy whipping cream
2 cups cold whole milk
2 boxes (3.4 oz each) instant vanilla pudding mix
1/2 cup powdered sugar
1 tsp vanilla extract
2 cans (21 oz each) apple pie filling
1 tsp ground cinnamon
1/2 cup caramel sauce
Instructions
Step 1: In a large bowl, whisk together the cold milk and instant vanilla pudding mixes until thickened. Let it sit for 5 minutes.
Step 2: In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Step 3: Gently fold the whipped cream into the vanilla pudding until the mixture is uniform and fluffy.
Step 4: Arrange a single layer of graham crackers in the bottom of a 9x13 inch baking dish. Spread 1/3 of the pudding mixture over the crackers.
Step 5: Mix the apple pie filling with cinnamon. Spread half of the apples over the pudding layer and drizzle with 2 tablespoons of caramel sauce.
Step 6: Repeat the layers of graham crackers, pudding, and remaining apples. Top with a final layer of graham crackers and the remaining pudding. Drizzle the top with the rest of the caramel sauce and refrigerate for at least 4 hours before serving.
Notes
For best results, let the cake sit in the fridge for a full 24 hours to ensure the graham crackers are completely soft.
