Instructions
- Cream Butter & Sugars: Beat softened butter with granulated sugar and brown sugar until pale and fluffy.
- Add egg and vanilla extract; mix until smooth.
- Dissolve instant espresso powder in warm water; stir into batter.
- Combine dry ingredients: whisk flour, baking soda, and salt.
- Gradually add dry mixture to wet; stir until just combined.
- Prepare cheesecake swirl: beat cream cheese and sugar until silky.
- Mix in egg yolk, vanilla, and dissolved espresso powder.
- Assemble cookies: scoop cookie dough onto baking sheets spaced 2 inches apart.
- Dollop cheesecake filling onto each mound.
- Use toothpick to swirl filling into dough creating a marbled effect.
- Bake at 350 °F for 12–15 minutes until edges set.
- Cool on sheet 5 minutes; transfer to wire rack.
- Make glaze: whisk heavy cream with dissolved espresso powder and powdered sugar until glossy.
- Drizzle glaze over cooled cookies and let set 5–10 minutes before serving.
Notes
For chewier centers, bake 1–2 minutes less. Add mix-ins like chocolate chips or toffee for variation. Store in airtight container up to 3 days at room temperature or refrigerate for longer freshness.
