  • ¼ cup heavy cream (for glaze)
  • 2 tablespoons instant espresso powder (for glaze)
  • ¼ cup powdered sugar (for glaze)

Instructions

  1. Cream Butter & Sugars: Beat softened butter with granulated sugar and brown sugar until pale and fluffy.
  2. Add egg and vanilla extract; mix until smooth.
  3. Dissolve instant espresso powder in warm water; stir into batter.
  4. Combine dry ingredients: whisk flour, baking soda, and salt.
  5. Gradually add dry mixture to wet; stir until just combined.
  6. Prepare cheesecake swirl: beat cream cheese and sugar until silky.
  7. Mix in egg yolk, vanilla, and dissolved espresso powder.
  8. Assemble cookies: scoop cookie dough onto baking sheets spaced 2 inches apart.
  9. Dollop cheesecake filling onto each mound.
  10. Use toothpick to swirl filling into dough creating a marbled effect.
  11. Bake at 350 °F for 12–15 minutes until edges set.
  12. Cool on sheet 5 minutes; transfer to wire rack.
  13. Make glaze: whisk heavy cream with dissolved espresso powder and powdered sugar until glossy.
  14. Drizzle glaze over cooled cookies and let set 5–10 minutes before serving.

Notes
