Description
A quick, delightful no-bake cookie featuring the rich flavors of praline, crunchy pecans, and sweet coconut, perfect for a fuss-free dessert.
Ingredients
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup heavy cream
1/4 tsp salt
1 1/2 cups pecans, chopped
1 1/2 cups sweetened shredded coconut
1 tsp vanilla extract
Instructions
Step 1: In a medium saucepan, melt the unsalted butter over medium heat until fully melted.
Step 2: Add the granulated sugar, brown sugar, heavy cream, and salt to the melted butter and stir continuously to combine all ingredients well.
Step 3: Bring the mixture to a boil, then allow it to boil steadily for about 3 minutes, stirring constantly to avoid burning and ensure the mixture thickens slightly.
Step 4: Remove the saucepan from heat and immediately stir in the chopped pecans, sweetened shredded coconut, and vanilla extract until all ingredients are evenly coated with the praline mixture.
Step 5: Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Work quickly as the mixture will set as it cools.
Step 6: Allow the cookies to cool completely at room temperature or transfer them to the refrigerator to speed up the setting process (about 30-60 minutes). Once firm, they are ready to serve and enjoy!
Notes
Ensure all ingredients are measured accurately for best results. For extra flavor, toast the pecans lightly before adding them to the mixture. These cookies are perfect for making ahead and can be a fantastic addition to any dessert platter.
