A simple, no-bake holiday cookie featuring a sweet and salty peanut butter filling between two Ritz crackers, dipped in melted chocolate and festive sprinkles.
Ingredients
1 sleeve Ritz Crackers (approx. 32-35 crackers)
1 cup creamy peanut butter
1/2 cup (1 stick) unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
12 ounces melting chocolate or chocolate chips (milk, semi-sweet, or white)
2 tablespoons vegetable shortening or coconut oil (optional, for smoother chocolate)

Instructions
Step 1: Prepare your workspace by lining a baking sheet with parchment paper. Lay out half of your Ritz crackers (about 30-35 crackers) on the prepared baking sheet, flat side up.
Step 2: In a medium bowl, combine the creamy peanut butter, softened unsalted butter, powdered sugar, and vanilla extract. Mix with an electric mixer or by hand until smooth and well combined. This is your cookie filling.
Step 3: Take a small amount of the peanut butter mixture (about 1-2 teaspoons) and spread it onto one of the Ritz crackers. Top with another Ritz cracker to create a sandwich.
Step 4: Repeat the process until all of the crackers have been used to form peanut butter sandwiches. Place the assembled sandwiches back on the parchment-lined baking sheet.
Step 5: Place the baking sheet with the cracker sandwiches into the freezer for 10-15 minutes. This helps the filling set, making them easier to dip.
Step 6: While the crackers are chilling, melt your chocolate. In a microwave-safe bowl, combine the melting chocolate (or chocolate chips) and vegetable shortening/coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted. Alternatively, melt over a double boiler.
Step 7: Remove the chilled cracker sandwiches from the freezer. Using a fork or a dipping tool, dip each cracker sandwich into the melted chocolate, ensuring it's fully coated. Gently tap off any excess chocolate.
Step 8: Immediately place the chocolate-coated cookie back on the parchment-lined baking sheet. Generously sprinkle with festive Christmas sprinkles before the chocolate sets.
Step 9: Repeat with the remaining cookies. Once all cookies are dipped and sprinkled, place the baking sheet back into the refrigerator for at least 15-20 minutes, or until the chocolate has fully set.
Notes
For an extra festive touch, try using half milk chocolate and half white chocolate for dipping, creating a beautiful contrast. You can also crush candy canes and sprinkle them on top for a peppermint twist!
