Description
A moist and tender banana bread made in just one bowl and topped with a buttery, cinnamon-spiced crunchy streusel.
Ingredients
3 medium ripe bananas, mashed (about 1 ½ cups)
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¾ cup granulated sugar
½ cup unsalted butter, melted and slightly cooled
2 large eggs, room temperature
1 teaspoon vanilla extract
½ cup all-purpose flour (for streusel)
â…“ cup packed brown sugar (for streusel)
½ teaspoon cinnamon (for streusel)
3 tablespoons unsalted butter, cold and cubed (for streusel)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
Step 2: In a large mixing bowl, mash the bananas with a fork until smooth.
Step 3: Stir in the melted butter, sugar, eggs, and vanilla until well blended.
Step 4: Sift the flour, baking soda, and salt directly into the bowl and fold gently until just combined.
Step 5: Mix the streusel ingredients in a small bowl with a fork until crumbly.
Step 6: Pour the batter into the loaf pan and sprinkle the streusel evenly over the top.
Step 7: Bake for 55-65 minutes until a toothpick comes out clean, then cool before slicing.
Notes
Ensure bananas are very ripe for the best sweetness. Do not overmix the batter once the flour is added.
