A quick and incredibly satisfying creamy tomato pasta dish cooked entirely in one pot, perfect for busy weeknights.


Ingredients

12 ounces pasta (penne, fusilli, or your choice)
1 can (14.5 ounces) diced tomatoes (with juices)
2 cups vegetable broth (or chicken broth)
1 cup heavy cream (or full-fat coconut cream for dairy-free)
2 tablespoons olive oil
3 cloves garlic (minced)
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil or parsley (for garnish, optional)
Grated Parmesan cheese (for serving, optional)


Instructions

Step 1: In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to let it brown or burn.
Step 2: Pour in the diced tomatoes (with their juices) and the vegetable broth. Stir everything together. Season with Italian seasoning, salt, and pepper to taste. Bring the mixture to a gentle boil.
Step 3: Stir in the uncooked pasta. Reduce the heat to a simmer, then cover the pot. Cook for approximately 10-12 minutes, or according to your pasta package's instructions, stirring occasionally. The pasta should be al dente and have absorbed most of the liquid.
Step 4: Once the pasta is cooked, remove the pot from the heat and stir in the heavy cream. Mix well until the sauce is beautifully creamy and smooth. If the sauce seems too thick, add a splash more broth or water until it reaches your desired consistency.
Step 5: Taste the pasta and adjust the seasoning if needed. Serve hot, garnished generously with fresh basil or parsley and a sprinkle of grated Parmesan cheese. Enjoy every comforting bite!
