1/2 cup chopped pecans
1/4 cup brown sugar (or maple syrup)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups milk (dairy or non-dairy)
1 teaspoon vanilla extract
2 tablespoons melted butter (or vegan butter)
1 large egg (or flax egg)
2 ripe peaches, thinly sliced


Instructions

Step 1: Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish.
Step 2: In a large bowl, combine the old-fashioned oats, chopped pecans, brown sugar (or maple syrup), cinnamon, and nutmeg. Stir well to mix the dry ingredients.
Step 3: In a separate medium bowl, whisk together the milk, vanilla extract, melted butter (or vegan butter), and the egg (or flax egg) until smooth.
Step 4: Pour the wet mixture into the dry ingredients. Stir thoroughly until the oats are fully moistened and all ingredients are combined. Be careful not to overmix.
Step 5: Transfer the oatmeal mixture into the prepared baking dish. Arrange the thinly sliced fresh peaches evenly over the top of the oat mixture.
Step 6: Bake in the preheated oven for 20-25 minutes, or until the edges are golden and bubbly, and the center is set. A toothpick inserted into the center should come out mostly clean.
Step 7: Remove from the oven and let cool for a few minutes before serving warm. Garnish with additional fresh peaches, a sprinkle of pecans, or a drizzle of maple syrup if desired.

Notes

For a creamier texture, you can reduce the baking time slightly. If using frozen peaches, ensure they are thawed and well-drained before adding to the mixture to prevent excess moisture.
