Description

These easy pecan pie bars feature a buttery shortbread crust topped with a rich, gooey pecan filling, perfect for any occasion and simpler than a traditional pie.


Ingredients

1 1/2 cups all-purpose flour
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
1/4 teaspoon salt
3 large eggs
1 cup light corn syrup
1 cup packed brown sugar
1 teaspoon vanilla extract
1 1/2 cups chopped pecans


Instructions

Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking pan or line it with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: For the crust, in a medium bowl, combine the flour, granulated sugar, and salt. Cut in the softened butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Step 3: Press the crust mixture evenly into the bottom of the prepared baking pan. Bake for 15-18 minutes, or until lightly golden brown. Remove from oven and set aside.
Step 4: While the crust is baking, prepare the filling. In a large bowl, whisk together the eggs, light corn syrup, packed brown sugar, and vanilla extract until well combined and smooth.
Step 5: Stir in the chopped pecans. Pour the pecan filling evenly over the warm, pre-baked crust.
Step 6: Return the pan to the oven and bake for another 20-25 minutes, or until the filling is set and golden brown. A knife inserted into the center should come out mostly clean.
Step 7: Remove the pan from the oven and place it on a wire rack to cool completely. This is crucial for the bars to set properly. Once cooled, you can chill them in the refrigerator for easier, cleaner slicing.
Step 8: Once thoroughly cooled (and chilled, if desired), lift the bars out of the pan using the parchment paper overhang. Cut into squares and serve.

Notes

For an extra touch, sprinkle a tiny pinch of flaky sea salt over the warm bars right after they come out of the oven. This enhances the sweet and nutty flavors beautifully. These bars freeze exceptionally well; wrap individual bars or the entire slab tightly in plastic wrap and then foil.
