Ingredients
20 oz can crushed pineapple, undrained
1 (3.4 oz) package instant vanilla pudding mix
1 (8 oz) container frozen whipped topping, thawed
2 cups mini marshmallows
Instructions
Step 1: In a large mixing bowl, combine the undrained crushed pineapple and the instant vanilla pudding mix. Stir well until the pudding mix is fully dissolved and incorporated.
Step 2: Gently fold in the thawed whipped topping until no streaks remain and the mixture is light and uniform. Be careful not to overmix, as this can deflate the fluff.
Step 3: Carefully fold in the mini marshmallows. Ensure they are evenly distributed throughout the pineapple mixture.
Step 4: Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, or ideally 4 hours, to allow the pudding to set and the flavors to meld.
Step 5: Serve chilled and garnish with extra marshmallows or a sprinkle of toasted coconut, if desired.
Notes
For an extra tropical twist, add 1/2 cup shredded coconut or a handful of chopped pecans for crunch.
