A luxurious, no-bake Italian dessert featuring coffee-soaked ladyfingers layered with a velvety pistachio-infused mascarpone cream.
Ingredients
24 ladyfingers
1 cup strong brewed coffee, cooled
1 cup pistachio cream (pistachio spread)
1 cup mascarpone cheese
1 cup heavy cream
1/3 cup sugar
1 tsp vanilla extract
Instructions
Step 1: Brew 1 cup of strong coffee and set it aside to cool completely in a shallow bowl.
Step 2: In a large mixing bowl, beat 1 cup of mascarpone cheese and 1 cup of pistachio cream until the mixture is smooth and uniform.
Step 3: In a separate chilled bowl, whip 1 cup of heavy cream with 1/3 cup sugar and 1 tsp vanilla extract until stiff peaks form.
Step 4: Gently fold the whipped cream into the pistachio-mascarpone mixture using a spatula until fully incorporated.
Step 5: Briefly dip each ladyfinger into the cooled coffee for 1-2 seconds per side, ensuring they are moistened but not falling apart.
Step 6: Place a layer of dipped ladyfingers at the bottom of a 9x9 inch dish.
Step 7: Spread half of the pistachio cream mixture evenly over the first layer of ladyfingers.
Step 8: Add a second layer of dipped ladyfingers, followed by the remaining pistachio cream.
Step 9: Cover the dish and refrigerate for at least 6 hours, allowing the Easy Pistachio Tiramisu to set properly before serving.
Notes
Ensure the mascarpone is at room temperature to avoid lumps in the pistachio cream. For a festive look, top with extra whole pistachios.
