A vibrant and crunchy 10-minute pickle that adds a tangy zest to any dish.
Ingredients
1 bunch red radishes (about 10-12 medium radishes), thinly sliced
1/2 cup rice vinegar
1/2 cup water
2 tablespoons granulated sugar
1 1/2 teaspoons kosher salt
1 clove garlic, smashed (optional)
1/4 teaspoon red pepper flakes (optional)
Instructions
Step 1: Clean the radishes, remove stems, and slice them into thin rounds using a mandoline or sharp knife.
Step 2: Place the sliced radishes and optional aromatics (garlic and pepper flakes) into a clean glass jar.
Step 3: In a small saucepan, combine vinegar, water, sugar, and salt. Heat over medium until the sugar and salt dissolve.
Step 4: Pour the hot liquid over the radishes. Let sit at room temperature for 30 minutes.
Step 5: Cover and refrigerate for at least 1 hour before serving.
Notes
For the best color, let the radishes sit for 24 hours as the red skins bleed into the brine.
