Description

These simple Bisquick muffins are packed with savory breakfast sausage and cheese, making for a quick, delicious, and satisfying start to any day.


Ingredients

1 lb ground breakfast sausage
2 cups Bisquick baking mix
1 cup milk
2 large eggs
1 cup shredded cheddar cheese (or cheese of choice)
1/2 teaspoon salt
1/4 teaspoon black pepper


Instructions

Step 1: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
Step 2: In a large skillet, cook the ground breakfast sausage over medium heat, breaking it up with a spoon, until fully browned. Drain off any excess grease thoroughly.
Step 3: In a large bowl, whisk together the Bisquick baking mix, milk, eggs, salt, and pepper until just combined. Be careful not to overmix; a few lumps are fine.
Step 4: Gently fold the cooked, drained sausage and shredded cheddar cheese into the Bisquick mixture.
Step 5: Divide the batter evenly among the 12 muffin cups. Fill each cup about two-thirds full.
Step 6: Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Step 7: Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.

Notes

For a spicier kick, use hot breakfast sausage or add a pinch of red pepper flakes to the batter. These muffins are also great with a mix of cheeses, like Monterey Jack or colby.
