Description

These easy sausage, egg, and cheese breakfast roll-ups are a perfect grab-and-go meal, packed with flavor and simple to make for a delicious start to any day.


Ingredients

1 lb breakfast sausage
6 large eggs
1/2 cup shredded cheddar cheese
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large flour tortillas
Butter or oil for greasing


Instructions

Step 1: In a large skillet, cook the breakfast sausage over medium heat, breaking it up with a spoon, until it's fully browned and no longer pink. Drain off any excess grease and set the sausage aside.
Step 2: In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. In the same skillet (or a separate one, lightly greased if needed), pour in the egg mixture.
Step 3: Cook the eggs over medium-low heat, stirring occasionally, until they are set and fluffy. Be careful not to overcook them; they should still be slightly moist.
Step 4: Gently warm the flour tortillas. You can do this individually in a dry skillet over medium heat for about 15-20 seconds per side, or stack them and microwave for 20-30 seconds until soft and pliable.
Step 5: To assemble, lay a warm tortilla flat. Spoon a portion of the scrambled eggs onto the lower third of the tortilla, followed by a portion of the cooked sausage and a sprinkle of shredded cheddar cheese.
Step 6: Fold in the sides of the tortilla, then tightly roll it up from the bottom, creating a neat roll-up. Repeat with the remaining tortillas and filling.

Notes
