A comforting and savory slow cooker recipe for ground beef ramen that's incredibly easy to make with minimal effort, perfect for a busy weeknight.
Ingredients
1 lb ground beef
1 cup matchstick carrots
1 red bell pepper, sliced
3 packs ramen noodles (discard seasoning)
2 cups beef broth
½ cup soy sauce
¼ cup brown sugar
2 tsp minced garlic
Instructions
Step 1: Brown the ground beef in a large skillet over medium-high heat. Drain any excess fat.
Step 2: Transfer the browned beef to your slow cooker. Add the beef broth, soy sauce, brown sugar, minced garlic, matchstick carrots, and sliced red bell pepper to the slow cooker.
Step 3: Stir everything to combine well. Cover and cook on Low for 4 hours or on High for 2 hours.
Step 4: Once the cooking time is almost complete (about 10-15 minutes before serving), open the slow cooker, add the ramen noodles (without seasoning packets), and stir gently to submerge them in the broth.
Step 5: Cook for another 10-15 minutes, or until the ramen noodles are tender to your liking.
Step 6: Serve hot, garnished with fresh green onions or sesame seeds if desired.
Notes
For a spicier kick, add a dash of sriracha or red pepper flakes to the broth. Feel free to add other vegetables like sliced mushrooms or baby spinach during the last 30 minutes of cooking.
