Easy Slow Cooker Queso Chicken Tacos

Description

Juicy shredded chicken simmered in a creamy, cheesy queso sauce with taco spices, perfect for effortless and delicious tacos.


Ingredients

2 lbs boneless, skinless chicken breasts or thighs
1 packet taco seasoning
1 can (10 oz) diced tomatoes with green chilies (like Rotel), undrained
1 cup queso dip (store-bought or homemade)
½ cup chicken broth or water
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
8 taco-sized tortillas (flour or corn)
Optional toppings: Shredded lettuce, diced tomatoes, jalapeños, chopped cilantro, sour cream, extra queso


Instructions

Step 1: Place the chicken in the bottom of your slow cooker in an even layer.
Step 2: Sprinkle the taco seasoning over the chicken, then add garlic powder, onion powder, salt, and pepper.
Step 3: Pour the can of diced tomatoes (with juices), chicken broth or water, and the queso dip right on top. Resist the urge to stir.
Step 4: Cover the slow cooker and cook the chicken on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and easily shreddable.
Step 5: Once the chicken is cooked through, use two forks to shred it right in the slow cooker. Stir everything together so the meat is fully coated in the creamy queso and tomato mixture.
Step 6: Warm your tortillas in a dry skillet or microwave them for 20–30 seconds wrapped in a damp paper towel until soft and pliable.
Step 7: Spoon the hot queso chicken into each tortilla and add your favorite toppings, such as shredded lettuce, diced tomatoes, jalapeños, cilantro, or sour cream. Serve immediately.

Notes

For an extra kick, add a pinch of red pepper flakes or a few dashes of your favorite hot sauce before cooking. This chicken also makes excellent leftovers for lunch bowls or quesadillas!
