A flavorful, cheesy, and incredibly simple one-pot meal that combines tender chicken with zesty taco seasoning and fluffy rice.
Ingredients
4 boneless, skinless chicken breasts
1 cup long-grain white rice
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
1 packet taco seasoning
1 cup chicken broth
1 cup shredded cheddar cheese
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
Instructions
Step 1: Place the boneless, skinless chicken breasts at the bottom of the slow cooker insert.
Step 2: Sprinkle the taco seasoning evenly over the chicken, ensuring each piece is well-coated for maximum flavor.
Step 3: Add the drained black beans, corn, and the entire can of diced tomatoes with green chilies (including the liquid) over the chicken.
Step 4: Pour in the chicken broth and add the uncooked long-grain white rice, stirring gently around the chicken to ensure the rice is submerged in liquid.
Step 5: Cover and cook on high for 3 to 4 hours or on low for 6 to 7 hours, until the chicken is tender and the rice is cooked through.
Step 6: Remove the chicken and shred it using two forks, then return it to the slow cooker and stir to combine.
Step 7: Sprinkle the shredded cheddar cheese over the top, cover for 5 minutes until melted, and garnish with fresh cilantro before serving.
Notes
Ensure the rice is long-grain white rice for the best texture; minute rice or brown rice will require different cooking times and liquid ratios.
