Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add sliced smoked sausage and cook until browned and slightly crisp, about 4-5 minutes.

- Pour in chicken broth, heavy cream, and diced tomatoes with green chilies including juice; stir to combine.
- Add uncooked pasta, paprika, salt, and pepper; stir to ensure pasta is submerged.
- Bring to a gentle boil over medium-high heat, then reduce heat to low, cover, and simmer 12-15 minutes, stirring occasionally until pasta is tender and sauce thickens.
- Stir in shredded cheddar cheese until melted and smooth.
- Garnish with chopped fresh parsley if desired; serve hot.
