1/2 cup granulated sugar (for filling)
1 tbsp lemon juice
1 tsp vanilla extract
2 cups all-purpose flour
1/2 cup granulated sugar (for topping)
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, chilled and cubed
1/2 cup milk
1/4 cup chopped nuts (optional, for topping)
1/4 cup granola (optional, for topping)
Fresh strawberries (optional, for garnish)
Whipped cream (optional, for garnish)


Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: Prepare the Filling: In a large bowl, combine the sliced strawberries, 1/2 cup granulated sugar, lemon juice, and vanilla extract. Mix gently until the strawberries are well coated. Pour the strawberry mixture into the prepared baking dish.
Step 3: Prepare the Cobbler Topping: In a food processor, combine the all-purpose flour, 1/2 cup granulated sugar, baking powder, and salt. Add the chilled and cubed butter and pulse several times until the mixture resembles coarse crumbs.
Step 4: Gradually add the milk to the flour mixture while pulsing, until a soft dough just comes together. Be careful not to overmix. Drop spoonfuls of the dough evenly over the strawberry mixture in the baking dish.
Step 5: If desired, sprinkle the chopped nuts and granola over the cobbler topping.
Step 6: Bake the Cobbler: Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the fruit filling is bubbly around the edges. (Cooking times may vary based on your oven.)
