Ingredients

2 cups all-purpose flour
1 tablespoon baking powder
2 tablespoons granulated sugar
1/2 teaspoon salt
2 large eggs
1 1/2 cups water or unsweetened almond milk
1/2 cup vegetable oil or melted coconut oil
1 teaspoon vanilla extract


Instructions

Step 1: Preheat your waffle iron to its highest setting to ensure a crispy exterior.
Step 2: In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
Step 3: In a separate medium bowl, beat the eggs until slightly frothy, then whisk in the water (or almond milk), oil, and vanilla extract.
Step 4: Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Small lumps are okay.
Step 5: Lightly grease the waffle iron with cooking spray if needed. Pour about 1/2 cup of batter into the center of the iron and close the lid.
Step 6: Cook for 3-5 minutes or until the steam stops escaping the iron and the waffles are golden brown and crispy.

Notes

For the crispiest results, use plain water instead of nut milk. Do not stack the waffles as they come out of the iron, or they will lose their crunch; place them on a wire rack instead.
