Description
A fun, family-friendly casserole layering seasoned ground beef, Fritos corn chips, and cheese, topped with fresh ingredients, reminiscent of a walking taco.
Ingredients
1 1/2 pounds ground beef
1/3 large onion, chopped
1 small can (4 ounces) green chilies
1 can (10 ounces) enchilada sauce
2 ounces cream cheese, softened
1 bag (10-12 ounces) Fritos corn chips
1 bag (8 ounces or 2 cups) shredded cheese, such as cheddar or Mexican blend
3/4 cup shredded lettuce
1/2 cup fresh diced tomatoes
16 ounces salsa
8 ounces sour cream
Instructions
Step 1: Brown the ground beef with the chopped onion in a large skillet over medium heat. Cook until the beef is no longer pink and the onion is tender. Drain any excess grease.
Step 2: Add the small can of green chilies, enchilada sauce, and softened cream cheese to the beef mixture in the skillet, stirring until the cream cheese is fully melted and all ingredients are well combined.
Step 3: In a 9x13 inch baking pan, create a layer with the Fritos corn chips. Evenly spoon the meat mixture over the chips, then top generously with the shredded cheese.
Step 4: Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until the cheese is bubbly and melted.
Step 5: Remove from the oven and let cool for a few minutes. Top individual servings with shredded lettuce, diced tomatoes, salsa, and sour cream as desired. Serve warm and enjoy!
Notes
For an extra kick, add a pinch of cayenne pepper to the meat mixture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
