Ingredients
4 cups mini marshmallows
1 (20 ounce) can crushed pineapple, well-drained
1 (3.4 ounce) package instant pistachio pudding mix
1 (8 ounce) container whipped topping, thawed (like Cool Whip)
2 cups diced fresh fruit (such as strawberries, banana, mandarin oranges)
1/2 cup chopped pecans or walnuts (optional)
Instructions
Step 1: In a large bowl, combine the mini marshmallows, well-drained crushed pineapple, and the dry instant pistachio pudding mix. Stir gently until all ingredients are somewhat coated.
Step 2: Fold in the thawed whipped topping until just combined. Be careful not to overmix, as this can deflate the whipped topping.
Step 3: Gently fold in the diced fresh fruit (strawberries, banana, mandarin oranges) and chopped nuts, if using. Ensure the fruit is evenly distributed.
Step 4: Cover the bowl and refrigerate for at least 1-2 hours, or preferably overnight, to allow the flavors to meld and the pudding to set completely.
Step 5: Serve chilled as a refreshing dessert or a sweet side dish. Garnish with extra fruit or a sprinkle of chopped nuts if desired.
Notes
For best results, make sure the pineapple is very well drained to prevent the salad from becoming watery. You can customize the fresh fruit based on seasonal availability or preference. If adding bananas, add them closer to serving time to prevent browning.
