Description

A vibrant and crunchy carrot salad tossed in a citrusy coriander dressing, perfect for healthy side dishes or meal prep.


Ingredients

3 large carrots peeled and ends trimmed
1 tablespoon olive oil
1 tablespoon fresh lime juice
1 teaspoon apple cider vinegar
1 teaspoon agave or sub maple syrup
1/2 teaspoon ground coriander
1/8 teaspoon cayenne pepper optional
1/4 teaspoon kosher salt
2 tablespoons chopped parsley
2 teaspoons sesame seeds
1 tablespoon chopped cilantro or mint optional


Instructions

Step 1: Peel and trim the carrots, then shred them using a box grater or a food processor.
Step 2: In a small bowl, whisk together the olive oil, lime juice, apple cider vinegar, and agave until well combined.
Step 3: Add the coriander, salt, and cayenne pepper to the dressing and stir to incorporate.
Step 4: Pour the dressing over the carrots in a large bowl and toss to coat thoroughly.
Step 5: Fold in the chopped parsley and sesame seeds (and optional herbs if using).
Step 6: Let the salad rest for 15 minutes before serving to allow flavors to meld.

Notes

Letting the salad sit for 30 minutes improves the texture as the carrots absorb the dressing.
