Description

A stunning, whimsical enchanted forest berry tart featuring a crisp buttery shortcrust filled with a medley of wild berries and forest-inspired flavors.


Ingredients

Scale

1.5 cups All-purpose flour
1/2 cup Cold unsalted butter, cubed
1/4 cup Granulated sugar
1 Egg yolk
2 tbsp Ice water
Pinch of salt
4 cups Mixed berries (blackberries, blueberries, raspberries)
1/2 cup Granulated sugar (for filling)
2 tbsp Cornstarch
1 tbsp Lemon juice
1 tsp Vanilla extract
1/2 tsp Ground cardamom
Optional: 2 oz Dark chocolate, melted


Instructions

Step 1: In a large bowl, mix flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs, then add the egg yolk and ice water, mixing until a dough forms.
Step 2: Wrap the dough in plastic and chill for at least 1 hour before rolling it out to fit a 9-inch tart pan.
Step 3: Blind bake the crust at 375°F (190°C) for 15 minutes using pie weights, then remove weights and bake for another 5 minutes until golden.
Step 4: In a medium bowl, gently toss the mixed berries with sugar, cornstarch, lemon juice, vanilla, and cardamom until evenly coated.
Step 5: Optional: Brush the bottom of the cooled crust with melted dark chocolate and let it set for a few minutes to create a seal.
Step 6: Pour the berry mixture into the tart shell, arranging them neatly, and bake for 25-30 minutes until the filling is bubbling and thick.
Step 7: Allow the enchanted forest berry tart to cool completely on a wire rack before slicing and serving.

Notes

Always use cold butter for the crust to ensure a flaky texture. You can use frozen berries, but be sure to thaw and drain them slightly before mixing with cornstarch.
