1.5 lbs 80/20 ground beef, divided into 4 equal loose balls
4 hamburger buns, split
8 slices sharp cheddar cheese
2 cups Doritos (Nacho Cheese or Cool Ranch), crushed
1/2 cup BBQ sauce
1/4 cup ranch dressing
1/2 tsp garlic powder
1/4 tsp smoked paprika
Salt and freshly ground black pepper, to taste
Optional: Lettuce, tomato, onion, pickles for serving


Instructions

Step 1: Prepare the BBQ Ranch Sauce. In a small bowl, combine BBQ sauce, ranch dressing, garlic powder, and smoked paprika. Mix well until smooth and set aside.
Step 2: Preheat a large cast-iron skillet or griddle over high heat until very hot. Lightly toast the cut sides of the hamburger buns on the hot surface for 1-2 minutes until golden. Remove and set aside.
Step 3: Place two beef balls onto the hot skillet, leaving ample space between them. Immediately season generously with salt and pepper. Using a sturdy metal spatula or burger press, firmly smash each beef ball into a thin patty, about 1/4-inch thick.
Step 4: Cook for 2-3 minutes until the edges are crispy and browned and a crust has formed. Carefully scrape underneath with the spatula to ensure no sticking, then flip the patties.
Step 5: Immediately place two slices of cheddar cheese on top of each flipped patty. Cook for another 1-2 minutes, or until the cheese is melted and gooey, and the burger is cooked through to your desired doneness.
Step 6: Transfer the cooked patties with melted cheese to the toasted bottom buns. Repeat Steps 3-5 with the remaining beef balls and cheese to cook the other two patties.
Step 7: To assemble the burgers, spread a generous amount of the prepared BBQ Ranch sauce on both halves of each toasted bun. Place the cheesy smash patties on the sauced bottom bun. Sprinkle a handful of crushed Doritos over the cheese. Add any optional toppings like fresh lettuce, tomato slices, onion, or pickles.
