Description

A delightful and savory dish featuring tender short ribs braised in a rich espresso sauce, perfect for special occasions or indulgent dinners.

Ingredients

Scale
  • 4 lbs bone-in beef short ribs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup strong brewed espresso
  • 1 cup beef broth
  • 1/2 cup red wine
  • 1/4 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Fresh thyme for garnish (optional)
  • Mashed potatoes for serving (optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Season the short ribs with salt and black pepper.
  3. In a large Dutch oven, heat the olive oil over medium-high heat.
  4. Add the short ribs and sear for about 3-4 minutes on each side, or until browned. Remove the short ribs and set them aside.
  5. In the same Dutch oven, add espresso, beef broth, red wine, balsamic vinegar, soy sauce, brown sugar, minced garlic, tomato paste, dried thyme, and dried rosemary. Stir to combine.
  6. Bring the mixture to a simmer and cook for about 5 minutes, or until slightly reduced.
  7. Return the seared short ribs to the Dutch oven and spoon the espresso sauce over them.
  8. Cover the Dutch oven and transfer it to the preheated oven.
  9. Braise for about 2.5 to 3 hours, or until the short ribs are tender and falling off the bone.
  10. Optional: Garnish with fresh thyme and serve with mashed potatoes.
  11. Serve hot and enjoy your delicious and indulgent meal!

Notes

Ensure ribs are braised for full 2.5 to 3 hours for tenderness. Pat ribs dry before searing for better browning. Customize with smoked paprika or red pepper flakes for added heat.
