- 4 lbs bone-in beef short ribs
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup strong brewed espresso
- 1 cup beef broth
- 1/2 cup red wine
- 1/4 cup balsamic vinegar
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Fresh thyme for garnish (optional)
- Mashed potatoes for serving (optional)
Instructions
- Preheat your oven to 325°F (165°C).
- Season the short ribs with salt and black pepper.
- In a large Dutch oven, heat the olive oil over medium-high heat.
- Add the short ribs and sear for about 3-4 minutes on each side, or until browned. Remove the short ribs and set them aside.
- In the same Dutch oven, add espresso, beef broth, red wine, balsamic vinegar, soy sauce, brown sugar, minced garlic, tomato paste, dried thyme, and dried rosemary. Stir to combine.
- Bring the mixture to a simmer and cook for about 5 minutes, or until slightly reduced.
- Return the seared short ribs to the Dutch oven and spoon the espresso sauce over them.
- Cover the Dutch oven and transfer it to the preheated oven.
- Braise for about 2.5 to 3 hours, or until the short ribs are tender and falling off the bone.
- Optional: Garnish with fresh thyme and serve with mashed potatoes.
- Serve hot and enjoy your delicious and indulgent meal!
Notes
Ensure ribs are braised for full 2.5 to 3 hours for tenderness. Pat ribs dry before searing for better browning. Customize with smoked paprika or red pepper flakes for added heat.
