Description

A delightful twist on a classic, these espresso chocolate chip cookies combine the rich, bold flavor of coffee with sweet, melting chocolate chips for an irresistible treat.


Ingredients

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon espresso powder (fine grind)
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups semi-sweet chocolate chips
1/2 cup dark chocolate chips (optional, for extra richness)


Instructions

Step 1: In a medium bowl, whisk together the all-purpose flour, baking soda, espresso powder, and salt. Set aside.
Step 2: In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy, about 2-3 minutes.
Step 3: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
Step 5: Fold in the chocolate chips until evenly distributed throughout the dough.
Step 6: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes. Chilling is crucial for flavor and texture!
Step 7: Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
Step 8: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Step 9: Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft. Do not overbake!
Step 10: Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For an extra boost of coffee flavor, you can brush a tiny bit of cooled brewed espresso over the baked cookies immediately after they come out of the oven.
