Description
An easy-to-make, stunningly rustic fig galette featuring a flaky homemade crust, fresh figs, and a hint of honey and thyme.
Ingredients
1.5 cups all-purpose flour
1/2 cup cold unsalted butter, cubed
1 tablespoon granulated sugar
1/4 teaspoon salt
3-4 tablespoons ice water
1 pound fresh figs, sliced
2 tablespoons honey
1 teaspoon fresh thyme leaves
1 egg (for egg wash)
1 tablespoon turbinado sugar (for garnish)
Instructions
Step 1: In a large bowl, whisk together flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Step 2: Add ice water one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic, and refrigerate for at least 1 hour.
Step 3: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 4: Roll out the chilled dough on a floured surface into a 12-inch circle. Transfer it to the prepared baking sheet.
Step 5: Arrange the sliced figs in the center of the dough, leaving a 2-inch border around the edges.
Step 6: Drizzle the figs with honey and sprinkle with fresh thyme leaves.
Step 7: Fold the edges of the dough over the figs, pleating as you go to create a rustic border.
Step 8: Brush the edges with egg wash and sprinkle with turbinado sugar.
Step 9: Bake for 30-35 minutes, or until the crust is golden brown and the figs are bubbly. Let cool slightly before serving.
Notes
Always use cold butter for the flakiest crust results. If figs are very ripe, you may need less honey.
