A budget-friendly and deeply savory one-pot rice dish featuring smoked sausage and Cajun aromatics.
Ingredients
2 cups long-grain white rice
1 lb smoked sausage, sliced
1 large onion, diced
1 green bell pepper, diced
2 stalks celery, chopped
3 cloves garlic, minced
4 cups chicken broth
1 tbsp Cajun seasoning
Fresh green onions for garnish
Instructions
Step 1: Sauté the sliced smoked sausage in a large skillet until browned, then remove and set aside.
Step 2: In the same skillet, cook the onion, bell pepper, and celery until softened.
Step 3: Add the garlic and Cajun seasoning, stirring for one minute.
Step 4: Add the rice and toast for 2 minutes, then stir in the broth and return the sausage to the pan.
Step 5: Bring to a boil, then cover and simmer on low for 18-20 minutes until the liquid is absorbed.
Step 6: Let rest for 5 minutes before fluffing with a fork and garnishing with green onions.
Notes
For extra spice, add an extra teaspoon of red pepper flakes or a dash of cayenne pepper.
