Description
An incredibly light and airy zero-carb bun made from just eggs, pork rinds, and cream cheese, perfect for keto and carnivore diets.
Ingredients
4 large eggs
1 cup finely crushed pork rind crumbs
2 oz softened cream cheese
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
Step 2: Separate the egg whites from the yolks. In a large bowl, whip the egg whites with a hand mixer until stiff peaks form.
Step 3: In a separate medium bowl, mix the egg yolks and softened cream cheese until smooth and well combined.
Step 4: Stir the ground pork rind crumbs into the yolk and cream cheese mixture until a thick paste forms.
Step 5: Gently fold one-third of the whipped egg whites into the pork rind mixture to lighten it up.
Step 6: Carefully fold in the remaining egg whites, being careful not to deflate the mixture, until no white streaks remain.
Step 7: Scoop the batter onto the baking sheet in 6 equal rounds, smoothing the tops slightly with the back of a spoon.
Step 8: Bake for 18-20 minutes or until the buns are golden brown and spring back when lightly touched.
Step 9: Remove from the oven and allow to cool completely on the pan before attempting to remove or slice.
Notes
Ensure your cream cheese is very soft to prevent lumps in the batter. If you don't have a scale, 2 oz of cream cheese is about 1/4 of a standard block.
